The casks were then transferred for aging to Tsunuki at the southern tip of the country where Mars Whisky has installed one of its warehouses.
Beyond this geographical particularity, this whisky is a blend of 3 types of casks: ex-bourbon, ex-sherry casks and casks that have contained umeshu, a Japanese liqueur made from ume, the Japanese plum.
This expression is a blend of unpeated and highly peated single malts giving a nose with aromas of cherry and green tea, joined in the mouth by greedy notes of caramel, brown sugar and vanilla. It is in the finish that the aromatic bouquet will reveal its peaty side with slightly smoky notes

The distillery Shinshu Mars
Nestled at an altitude of 800 meters in the heart of the Japanese Alps near Nagano, Shinshu was founded in 1985 by Hombo Shuzo, a wine and shochu producer based on the island of Kuyshu.
Shinshu is the highest distillery in Japan and enjoys a cool climate in summer and snowy winters where temperatures are often negative. Built at the foot of Mount Komagatake, from which its single malt takes its name, the distillery is surrounded by pure water springs which it uses for the production of its whiskies.
