Ontake First Fill Solera Sherry Butts offers a rich olfactory experience with sweet aromas of roasted apples and apricots, complemented by refreshing citrus notes, spices and toasty nuances. On the palate, it's distinguished by a dry flavor that quickly evolves into a full-bodied sweetness reminiscent of fruitcake, enriched by hints of vanilla. The finish is long and smooth, leaving a lasting impression of richness and complexity.

This whisky is made from carefully selected two-row barley and unpeated malt, and uses naturally sweet water from springs 300 meters below ground. Aged in old sherry casks, it acquires a light amber color and a distinctive aromatic richness. Distillation at The Ontake takes place in optimal conditions, at an altitude of around 400 meters in a hilly region of Kagoshima prefecture, offering a cool climate ideal for whisky aging.

Founded in 1845, the Nishi Shuzo brewery is renowned for its Satsuma Shochu and its constant pursuit of delicious taste. Inspired by the depth of spirits, The Ontake distillery was established in 2019 with the ambition of producing authentic Japanese whisky. Located in an area overlooking Mount Mitake, the distillery benefits from an abundance of pure water, essential to the production of high-quality whisky. The distillery team's philosophy is based on the mastery of fermented spirits and a commitment to purity and excellence, perpetuating a tradition that goes back over 180 years.
