The finish is long and smooth, leaving a lasting impression of richness and complexity.
This whisky is made from carefully selected two-row barley and unpeated malt, and uses naturally sweet water from springs 300 meters below ground. Aged in old sherry casks, it acquires a light amber color and a distinctive aromatic richness. Distillation at The Ontake takes place in optimal conditions, at an altitude of around 400 meters in a hilly region of Kagoshima prefecture, offering a cool climate ideal for whisky aging.
Founded in 1845, the Nishi Shuzo brewery is renowned for its Satsuma Shochu and its constant pursuit of delicious taste. Inspired by the depth of spirits, The Ontake distillery was established in 2019 with the ambition of producing authentic Japanese whisky. Located in an area overlooking Mount Mitake, the distillery benefits from an abundance of pure water, essential to the production of high-quality whisky. The distillery team's philosophy is based on the mastery of fermented spirits and a commitment to purity and excellence, perpetuating a tradition that goes back over 180 years.

The distillery The Ontake Distillery
Operational since December 2019, the Ontake distillery was created by the Nishi Shuzo company, whose origins date back to 1845 and which mainly produces shochu, including Tomino Houzan that you can find on Uisuki. Located at an altitude of around 400 m in the center of the Satsuma peninsula, in Kagoshima prefecture, the Ontake distillery benefits from a superb setting with a view overlooking the entire bay and the city of Kagoshima, but above all it has access to pure mountain water. A favorable context that allows Nishi Shuzo to meet its ambition: to produce a pure, aromatic and flavorful whisky.
The particularity of the Ontake distillery is its rather exclusive positioning with an architecture inspired by private clubs and museums, the presence of a golf course (owned by Nishi Shuzo) and an ambitious owner's cask program. An exclusive character that can be found in the first bottling available to the public, released in 2023. To date, Ontake whiskies have in common the use of non-peated malt and the benefit of aging in Olorosso sherry casks. Characteristics available on the "First Edition" single malt, recently available in our shop. An opportunity to discover the first steps of a promising distillery.
