This sake reveals a discreet, refined nose, subtly blending white fruit aromas such as grape and pear, with exotic notes and a vegetal touch of green pineapple. On the palate, it has a powerful attack, initially expressing flavors of puffed rice and chestnut from the koji, before revealing a delicate texture reminiscent of watermelon. With time and tasting, its power becomes more apparent, releasing aromas of stone fruit, notably apricot, accompanied by a beautiful acidity. This sake reveals its full aromatic potential after a few moments in the glass or on the palate.
Dassai 45, with its rich, generous mouthfeel, is ideally suited to white meats and poultry. Its robust structure and complex profile are fully revealed when served lightly chilled, offering a harmonious and unforgettable tasting experience. Founded in 1948 in the Yamaguchi region, Asahi Shuzo is now famous around the world for its Dassai Sake line.
Nestled in a lush mountainous region not far from the town of Iwakuni, Asahi Shuzo was producing ordinary sake and was in decline when Hiroshi Sakurai took over the small family business in 1984 and decided to shift production to high-end sake.
