This sake reveals a delicate bouquet, accompanied by light notes of lemon, lime and hay. A lively attack gives way to refreshing, lemony flavors, softened by a smooth, balanced finish, offering an incomparable taste experience.

Under the direction of Master Toji Kimio Yonezawa, every step of the brewing process is carried out with meticulous care, from rice selection to final filtration, guaranteeing the exceptional quality of each cuvée. All ingredients are carefully selected to give each sake its unique character. Guided by the expert advice of Master Toji, the team attends to every detail, from cooking to fermentation, to create the full-bodied, generous flavors that are the true signatures of the Akashi brewery.

Akashi Tai Tokubetsu Honjozo is a lighter sake to which the Master Brewer adds a small amount of alcohol before the filtration stage, intensifying the aromas obtained during brewing. Offering a more pronounced length on the palate, it harmonizes perfectly with a variety of seafood dishes and can be enjoyed at room temperature.

Brewery Akashi Sake Brewery

Based in Akashi since 1856, the Yonezawa family brewery has been producing Japanese sake and liqueurs for over a century. Marketed under the Akashi-Tai brand, their name pays homage to the gilthead sea bream ("Tai" in Japanese), emblem of Akashi City.


Made from a fine selection of the best Gohyakumangoku and Yamadanishiki rice, Akashi-Tai sakes are produced in small quantities, under the supervision of Kimio Yonezawa, Master Toji of the house and also Master Blender & Distiller from the adjacent Kaikyo distillery.
