The nose opens with exhilarating aromas of kumquat and almond, harmoniously complemented by the sweetness of honey and vanilla. On the palate, the texture is smooth and velvety, revealing gourmet notes of milk cream and yogurt. The fruity personality of the nose is fully expressed, with elegant touches of plums and peaches, offering a balanced and delicious experience. The smooth, long finish is marked by rustic barley flavors from the floor malting process, testifying to Chichibu's commitment to craftsmanship at every stage of production.

Made from 100% ground-malted barley, an artisanal process introduced by Chichibu in 2008, this single malt is a blend of whiskies aged between 9 and 15 years. These whiskies are aged in a variety of casks, including bourbon, sherry puncheons, mizunara hogsheads, wine casks and chibidaru (Chichibu's characteristic small casks). Bottled at 54.5% alcohol, without chill filtration or coloring, it is limited to 12,000 bottles, reflecting the authenticity and richness of the distillery's distinctive aromas. 

The Chichibu distillery, founded by Ichiro Akuto, is renowned for its innovative approach while respecting Japanese whisky traditions. The “On the Way” series symbolizes the intermediate stages of maturation, testifying to Chichibu's relentless quest for excellence and the creation of older whiskies or special expressions. The distillery

The distillery Chichibu

Ichiro Akuto, grandson of the founder of the Hanyu distillery, decided in 2007 to build a new whisky distillery in the town of Chichibu, 100 kilometers northwest of Tokyo.


Located near the old Hanyu distillery, the local climate with harsh winters and hot & humid summers, gives a certain maturity to the whiskies produced in Chichibu despite their relative young age (production started in 2008).


A small distillery, Chichibu produces in small quantities, but the remaining stocks of Hanyu, Kawasaki and Karuizawa, now exhausted but having been housed there, have allowed Ichiro Akuto to compose rare and exceptional blends. In 2020, the first of Ichiro Akuto's dreams came true with the first 10 year old single malt distilled, aged and blended in Chichibu and a long history beginning to be written.
